  • 100 g of honey
  • 150 g whole milk

Preparation

Preheat the oven to 160º.

Grease a plum mold by greasing with a little butter.

In the Thermomix glass add flour, yeast, cinnamon and salt powder. I stirred over time 10 seconds, speed 5. Reserve in a bowl.

Opera cake is a classic French recipe. The inventor of this cake seems to have been a certain Mr. Cyriaque Gavillon, who in 1955 was a pastry chef at the famous and exclusive Parisian pastry shop Dalloyau.

This gentleman's intention was to create a square cake, with visible layers, a single mouthful that could offer a complex and delicious taste. Mr. Gavillon's wife was the one who named the cake Opera, out of admiration for a first ballerina at the Paris Opera. Opera cake is a rectangular cake (preferably even square), composed of three layers of thin top with almonds (the so-called Mona Lisa top) syruped in coffee syrup and filled with a delicious cream of butter with coffee and chocolate ganache. The surface of the cake is covered with chocolate icing and elegantly and discreetly inscribed "Opera". Opera cake supports only a minimalist decor, with small chocolate decorations, representing musical notes.
