  • 220g butter or margarine
  • 400g caster sugar
  • 5 eggs
  • 1 teaspoon vanilla extract
  • 75g desiccated coconut
  • 1 teaspoon baking powder
  • 250g plain flour
  • 225g cream cheese
  • 110g butter
  • 1 teaspoon vanilla extract
  • 480g icing sugar
  • 2 tablespoons single cream
  • 60g chopped walnuts
  • 75g desiccated coconut

  1. Preheat oven to 180 C / Gas 4. Grease three 23cm round cake tins. In a small bowl, dissolve the bicarbonate of soda in the buttermilk; set aside.
  2. In a large bowl, cream together 110g butter, margarine and caster sugar until light and fluffy. Mix in the eggs, buttermilk mixture, 1 teaspoon vanilla, 75g coconut, baking powder and flour. Stir until just combined. Pour batter into the prepared cake tins.
  3. Bake in the preheated oven for 30 to 35 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
  4. To Make Icing: In a medium bowl, combine cream cheese, 110g butter, 1 teaspoon vanilla and icing sugar. Beat until light and fluffy. Mix in a small amount of cream to attain the desired consistency. Stir in chopped nuts and remaining desiccated coconut. Spread between layers and on top and sides of cooled cake.


You can use margarine, or a mixture of butter and margarine, for a slightly lighter texture to this cake.

plz can anyone tell me if the recipe is supposed to have 110g of butter as well as 110g of margarine as i am totally confused.would like to try out this cake tomorrow.-14 Feb 2012
