Chef John Besh is the man behind some of New Orleans' greatest restaurants (August, Luke, Domenica), but as opposed to some other chefs who spend their lives in restaurant kitchens, he also loves cooking at home. His newest TV show, in fact, Chef John Besh’s Family Table, draws on that passion for cooking with his family. It comes as no shock, then, that his Thanksgivings are filled with family, tradition, and surprisingly, lots of different varieties of stuffing.

"For me, Thanksgiving is all about family and friends getting together," Besh told The Daily Meal. "It’s the tradition of a menu never changing, and looking forward to the oyster dressing, the crabmeat and mirliton dressing, the Andouille cornmeal dressing — we just live by our sides — and down here in my neck of the woods we call stuffings dressings, so you have all these different kinds of stuffing, mainly seafood-driven, and almost nothing without a little bit of bacon or sausage in it."

And while the dressings might be the most anticipated items on the table, tradition doesn’t end there. "One tradition that we always have is to cook an extra turkey so we have it for the gumbo the day after Thanksgiving," he said. "Thanksgiving is one day, and we so look forward to the leftover turkey gumbo that we cook an extra turkey just to make sure we’ll have plenty left over, and both of those carcasses are used for rich turkey broth."

Any other items always on Besh’s Thanksgiving table? "There’s also the baked sweet potatoes cooked down with butter and steamed cane syrup," he added. "We always have a bisque or a soup of some kind, so a lot times it might be a wild duck gumbo or an oyster stew."

"Thanksgiving’s a time to revel in our soulful cooking," he said. "Those old family recipes that have been passed on for generations."

Many of the very things that I cook during the holiday season are the old, traditional dishes of my childhood: such Creole classics as turtle soup laced with sherry, oyster dressing, a standing roast of our Charolais beef, and, of course, Mom's many wonderful cookies, dried fruit and rum cake, pecan sweet potatoes, and black-bottom pie. Those long gatherings of yesteryear shape my menus today in a way that no culinary school could do. In this way, the holidays connect us to our South Louisiana roots. Every year, I do versions of these favorite Creole foods, and every year I search for ways to be innovative without losing the very soul of the dish. It's one of the things I love the most about cooking here: not just that food matters so much but that it matters the most to locals, who have always held chefs and cuisine in high esteem.

Tips: Prepare this dish a day or so ahead, but don't bake it until just moments before serving. After you've combined the ingredients, evaluate the consistency. If the French bread seems too dry, add a cup or two of chicken stock.

Easy Way A meat-pie shortcut for the home cook: Use store-bought empanada dough instead of making your own. And, instead of using duck fat to sauté the meat filling as the cooks at Besh Steak do, butter is a perfectly fine substitute and much easier to find.

Flipping through the latest issue of Metropolitan Home, I came across an article about chef John Besh, his four boys and some fabulous (yet down-home) holiday feast. As I have been thinking about new dishes to accompany our upcoming Thanksgiving dinner, the one recipe in the article that caught my eye was for ‘Sweet Potato Souffles With Sticky Rum Goo’. I was interested because of the incorporation of sweet potatoes, that sweet starch traditionally paired with turkey, made sweeter by the typical addition of heaps of brown sugar, ridiculous mini marshmallows or whatever. I was also interested by the fact that I had never made a souffle before. Terrible, I know. There is no rum in the house at the moment but I figured I could just test the souffle portion of the recipe and if it turned out well I could always run out for some rum to whip up the ‘goo’. Heck, any excuse to buy alcohol is a good one as far as I am concerned.

The recipe gives the option to make either one big souffle or split it into six small ramekins for indiviual portions. Even though John is holding the big guy in the photo I decided to go for the smaller ramekins because, well, that’s what I have on hand (that’s my version on the right, in the combo photo above). With the potatoes roasted the night before, the recipe itself is pretty simple… if a little time consuming. ‘Ricing’ the potatoes takes a while and whipping the egg whites takes a while. But soon enough I had it in the oven. The recipe calls for 20 minutes in small ramekins and 45 to 50 minutes in the big ramekin. Unfortunately, upon inspection at 20 minutes, the souffles were nowhere near cooked through. I ended up giving them another 20 minutes. But, as you can see from the photo, I probably could have given them another 10 as my tops are barely starting to brown whereas John’s has a nice looking dark crust. So allow yourself more time than the recipe calls for. I guess I just got worried that they would over cook since I was way past the time prescribed in the recipe.

As for the final product, the souffles are very good. The slight earthy sweetness of sweet potatoes comes through. Though I must admit that they didn’t taste as sweet as other sweet potato dishes I have had in the past. Of course maybe that is due to the copious amounts of brown sugar and marsh mallows I mentioned earlier. There was much more of an earthy taste. I think if I had to do it over again I might add a bit more sugar to these souffles to push it squarely into the dessert category. And maybe give it a little more taste complexity by adding an alcohol component such as cognac (or that rum) to the souffle itself. Instead of just in the sauce. And maybe orange zest too?

Anyway, the boss took a bite and said “this is really good”. I wasn’t sure if she meant that in a ‘wow, this tastes great’ sort of way, or a ‘wow, you pulled off a souffle!’ sort of way. I said “thanks… but I wonder if it is worth all this effort”. She said, “that’s always the question with souffles”. Now that I know the time adjustments I could give the golden brown crust another try. And I could put the effort into make the ‘rum goo’ component of the recipe. But… the boss may have a point.

  • 2 tbsp bacon fat or oil
  • 1 onion chopped
  • 1/2 green bell pepper seeded and chopped
  • 1 stalk celery chopped
  • 1 lbs dried red kidney beans soaked in water overnight and drained
  • 1 smoked ham hock
  • 3 bay leaves
  • salt and pepper
  • Tabasco
  • 4-6 cups cooked white rice
  • 2 green onions chopped

John Besh’s Day-After-Thanksgiving Turkey Gumbo

Leftover turkey can be used for pot pies, casseroles, pho or fried rice, but John Besh&rsquos favorite way to eat it is &mdash no surprise &mdash gumbo.

The Louisiana chef, who recently published &ldquoBesh Big Easy: 101 Home Cooked New Orleans Recipes&rdquo (Andrews McMeel, $25), says he makes this particular version just about every year.

Day-After-Thanksgiving Turkey Gumbo

3/4 cup canola oil
3/4 cup flour
1 onion, chopped
1 stalk celery, chopped
1/2 bell pepper, seeded and chopped
4 cloves garlic, minced
2 bay leaves
3 quarts chicken stock
Meat picked from leftover roast turkey, plus the turkey carcass
2 lb. smoked sausage, sliced 1/2-inch thick
1 lb. okra, sliced
Tabasco
Salt and pepper
6 cups cooked white rice
2 green onions, chopped

Make a roux by heating the oil in a large heavy-bottomed pot over high heat. Whisk the flour into the hot oil. It will immediately begin to sizzle. Reduce the heat to medium and continue whisking until the roux turns a deep brown color, about 15 minutes. Add the onions, stirring them into the roux with a wooden spoon. Lower the heat to medium low and continue stirring until the roux turns a glossy dark brown, about 10 minutes.

Add the celery, bell pepper, garlic and bay leaves and stir for 3 minutes, then add the stock. Raise the heat to high and bring to a boil. Add the turkey carcass, sausage and okra. Lower the heat and simmer for 45 minutes. Stir occasionally and skim the fat from the surface of the gumbo (moving the pot half off the burner helps collect the impurities). Remove the carcass from the pot.

Add the turkey meat and season well with Tabasco, salt and pepper. Serve in bowls with rice, scattered with the green onions. Serves 10

Bourbon Pecan Pie

My grandmother Grace used pure molasses in her pecan pie, and my mother, Imelda, uses only corn syrup. It may be good family politics, but I happen to like using both in my pecan pie. In fact, you may substitute either syrup for the other. The molasses doesn't have to come to room temperature exactly, but it should be cool enough that when you add the eggs, they won't be tempted to scramble.

Ingredients:

4 tablespoons unsalted butter

1 teaspoon vanilla extract

1 recipe Basic Pie Dough, fitted into a 9-inch pie pan

Preparation:

1. Place a rack in the middle of the oven and preheat the oven to 350°.

2. Put the molasses, brown sugar, corn syrup, butter, and salt into a medium saucepan over moderate heat. Stir with a wooden spoon until the butter has melted and the sugar has dissolved.

3. Increase the heat to high and let the mixture boil for 1 minute. Remove from the heat, then pour into a mixing bowl and set aside to let cool to room temperature.

4. Whisk the eggs, vanilla, and bourbon into the molasses. Stir in the pecans, then pour into the prepared pie crust. Bake until the pie is set around the sides and nearly set in the middle (it shouldn't wobble when you give it a nudge), about 1 hour. The color should be mahogany and the crust golden. Allow to cool completely before serving.

Heavens rejoice, New Orleans Chef John Besh has published a new cookbook!

Although you can certainly savor "Besh Big Easy: 101 Home Cooked New Orleans Recipes," admiring the gorgeous photos of food, markets and long-time establishments such as Angelo Brocato's, it's also more cook friendly than his past coffee table productions. With this cookbook, Besh is speaking my language. Apparently, he has the same issues with time that I have, now that he's a dad.

"I cooked at home like a chef, often bringing in hard-to-find ingredients from my restaurants, cooking delicious renditions of the traditional dishes of New Orleans, but with a deliberate, chef's spin on them," Besh writes in the introduction. "Today, I cook more like a scruffy, grizzly, bearded dad."

Here's some lagniappe to go with those 101 recipes: a list of "Big Easy ingredients" to have in your pantry, Besh's advice accompanying every recipe, metric conversions and beautiful photos by Maura McEvoy. There's even a handy index in back that explains where these brilliant photos were taken, places such as Central Grocery and Leidenheimer's bakery. Talk about a great gift for the New Orleanian in your life! (Note: Christmas list!)

Recipes include many Louisiana favorites, such as corn macque choux, wild duck and tasso jambalaya, gumbos, grandma's fried chicken and those seafood dishes Louisiana is famous for. Many recipes require few ingredients to perfect a tasty dish, such as field peas in pot liquor or Creole stuffed bell peppers. And then there's a few innovative dishes that set taste buds firing like Duck Camp shrimp and grits, seared venison with fig preserves and a luscious blueberry pie (you have to see the photo to truly appreciate why I included it here). Also, Besh's new book includes plenty of great oyster recipes for Thanksgiving.
