IngredientsServes: 4

  • 30g butter
  • 1 tablespoon olive oil
  • 1 whole chicken
  • 40 cloves garlic, peeled
  • 4 tablespoons water
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon dried or 1 teaspoon of fresh thyme
  • 1/4 teaspoon ground black pepper

MethodPrep:25min ›Cook:1hr35min ›Ready in:2hr

  1. Preheat the oven to 180 C / Gas 4.
  2. Melt the butter with the olive oil in a large (hob and oven-safe) casserole dish over medium-high heat. Add the chicken to the dish and brown on all sides in the butter and oil, 5 to 10 minutes. Remove the chicken to a chopping board.
  3. Drain all but 2 tablespoons of liquid from the dish; stir the whole garlic cloves into the reserved liquid. Return the chicken to the casserole dish; sprinkle the water, lemon juice, salt, thyme and black pepper over the chicken; cover tightly.
  4. Bake the chicken in the preheated oven until no longer pink at the bone and the juices run clear, about 90 minutes. An instant-read thermometer inserted into the thickest part of the thigh should read 82 degrees C. Remove the chicken from the oven, cover with a doubled sheet of foil and allow to rest in a warm area for 10 minutes before slicing.

I made this recipe and it was absolutely delicious. I used a little less garlic because I had a small chicken and I reduced the cooking time accordingly. I forgot to put a lid on the dish when I put it in the oven but the meat was still really moist. I did expect it to be more garlicky though and I couldn't taste any lemon. Next time I might chop up some of the garlic and put it and some lemon slices under the skin.-19 Sep 2011

This was absolutely delicious! Easy to make...I put 20 cloves of garlic as it was my own grown and quite strong. I also added a quarter lemon plus more garlic inside the bird before it went into oven. Came out 90mins later and looked and smelt gorgeous....Tasted divine!-28 Aug 2013

This is a classic French dish. You will get the same affect if you use 20 cloves of garlic, cut in half. The smaller you make garlic, the more potent it becomes.-02 May 2009

How Long to Grill Chicken Breasts

The grill time for chicken breasts depends on the thickness of the chicken breasts, and the level of heat from the grill. In general, for chicken breasts that are 1 inch thick, placed on a high heat grill about 4 inches about the fire, will take between 4 and 6 minutes per side. You can rotate the breasts a quarter turn (90 degrees) after 2 minutes on each side to get those nice cross hatched grill marks. Or simple flip the breasts once during cooking, for parallel cross hatch marks on each side.

CHICKEN RECIPES:

Do I have to use boneless chicken breasts in this recipe? No. You can use chicken thighs or chicken tenderloins in this dish.

Asparagus is a great veggie for one-pan meals because it cooks quickly.

DO I HAVE TO USE ALL THE BUTTER?

Ever since I’ve done the Keto diet I’m not afraid of fat like butter. If you want, you can definitely cut the butter down for this recipe.

CAN I USE A DIFFERENT VEGGIE?

Asparagus works great here but you can also use broccoli, zucchini, or even Brussels sprouts.

WHAT TO SERVE WITH THIS?

This is a full meal in itself but if you want to spread it out serve over rice or cauliflower rice for a low-carb option.

What to serve with creamy garlic chicken

Try rice, mashed potatoes, pasta, or a salad if you want to keep it low-carb. Sweet corn, roasted veggies (try my maple roasted carrots and beets), or green beans would also go great.

Easy Garlic Chicken

When I found this recipe for chicken with garlic and parsley on a blog called All That Splatters I thought it looked delicious and might make it onto my kids short list. Well, I was right. My one son took one bite and said, with his mouth full, “Oh that’s good. You can make this again!”

I’ve made this dish MANY times, it can be thrown together in less than 30 minutes, and really, you could use any fresh herb that strikes your fancy. A few that come to mind are rosemary, sage, and thyme.

Parsley works so well because of its mild flavor and doesn’t overpower the dish. This is GREAT for one of those nights when you don’t know what to cook. Serve this juicy, tender chicken with some quick cooking rice and steamed veggies.

Ingredients for Easy Garlic Chicken

  • 2 tablespoons good olive oil

Helpful Kitchen Tools

I think one of the reasons this chicken recipe is such a success is the marriage of olive oil and butter and the simplicity of the ingredients needed. What a delicious combination. I have made a few adaptations and they are reflected in the recipe below. Enjoy!

Frequently asked questions

Honey garlic sauce is made of exactly what it sounds like it has. The sauce is typically made of a combination of honey or brown sugar, garlic, ginger, soy sauce, and oil. Our honey garlic chicken is slightly different since we added a bit of oregano and made it without ginger.

To thicken honey garlic sauce, you don&rsquot necessarily need to add cornstarch. You may use any flour of choice. Simple mix some flour with water and pour it in. You may also use rice flour, arrowroot powder, or potato starch.

Honey garlic chicken is perfect for meal prepping because they store so well. You may store leftover chicken in a sealed container in the fridge for up to 3 days.

How to make lemon butter chicken sauce

We’ll start by heating the lemon juice, garlic, red pepper flakes, and seasoning in a small saucepan. Reduce the lemon juice until you’ve got roughly three tablespoons remaining, this shouldn’t take more than 1-2 minutes. Then, slowly add the butter a little bit at a time, swirling the saucepan to help the butter melt. I like to do this while the chicken is browning, it doesn’t take more than 5 minutes!

How does the butter thicken the sauce?

Have you made my garlic butter baked salmon in foil? If you have, we’re using the same technique to thicken it up. You don’t need flour or cornstarch. The key is to let the lemon juice, garlic, red pepper flakes, and Italian seasoning simmer until it reduces a bit. Then, we’ll slowly add cold pats of butter a little bit at a time to help the sauce thicken. This will take a few minutes but what you get it a zingy lemon butter sauce that’s restaurant quality. The key is to use cold butter. The sauce won’t thicken properly if your butter is room temperature or melted!

What other veggies can I use?

Sure! You can swap the green beans for sliced zucchini or asparagus if you’d like.

Weeknights are hectic in our household and this meal is constantly in our meal plan!

Now, I normally make chicken pasta with garlic butter sauce but this version was so much easier and faster and only required one pot.

There was barely any mess to clean up afterwards… Thank goodness!

Best of all, everyone in the family approves of this and some even ask for second servings…hehe.

What to serve with creamy garlic chicken pasta?

You can serve the following side dishes:

You can also make this one pan garlic chicken pasta with:

  • Broccoli
  • Spinach
  • Kale
  • Asparagus
  • Frozen vegetables
  • Lemon
  • Proscuitto
  • Tomato sauce
  • Sun dried tomatoes
  • Roasted red peppers
  • Basil
  • Three cheese blend

Tips and Techniques

-If the pasta is not cooked through and looks dry, add a little more water and cook for a bit longer.

-You can use half low sodium chicken broth and half water to enhance the flavor even further.

-Use unsalted butter instead of salted butter or else the pasta can become very salty.

-Make sure to use a nonstick pan/skillet so that there is no sticky mess.

-To make healthy garlic chicken pasta, you can reduce the amount of butter, use fat free cream cheese and low fat parmesan cheese.

-Don’t omit the lemon zest or lemon juice because it adds so much flavor and tastes very bland without it.

-Use roasted garlic in this recipe to really enhance the garlic flavor.

-Instead of preparing the chicken like I did, you can also use baked, grilled or roasted chicken in this recipe and toss that with boiled pasta, cheese, herbs and spices.

– Turn this into a pasta salad: You can prepare the chicken in this recipe, as explained below and then mix it with boiled bow tie pasta and lots of cheese and lemon juice.
