  1. Preheat oven to 180 C / Gas 4.
  2. Cream together butter and sugar. Mix in rice flour until well blended. Add plain flour. Remove from bowl.
  3. Knead dough for 5 minutes. Roll dough out and place in a greased and floured 20x30cm or similar sized tin.
  4. Prick the top with a fork. Bake 35 minutes or until golden brown and a knife inserted in the middle comes out clean. Cut into bars and allow to cool in the tin.

Fructose

Can be purchased in health speciality shops. If unavailable, use 300g caster sugar.

Valentine’s Day is right around the corner and next to Christmas, it’s my favorite holiday to bake for. I usually make up a batch of my favorite heart shaped sugar cookies. Other than Christmas, this is the only time of year I do a rolled, frosted sugar cookie. I’m just too lazy the rest of the year and instead, make the perfect sugar cookie when that sugar cookie hankering hits!

If you love a sugar cookie but don’t have the time for a frosted cookie, you are going to want to try these yummy shortbread cookies. They are sweet and buttery and the perfect thing to go with your afternoon tea or a fun Valentine’s Day Hot Chocolate Bar. Make up a batch and wrap up some of these one bite wonders in a little cellophane bag and share the love with someone.

They are simple to make and only require butter, flour, powdered sugar and almond extract.


Melt-In-Your-Mouth Shortbread Cookie Recipe

My Christmas cheer always starts with Boney M’s Christmas Album…yup ‘Mary’s Boy Child’ is the one song that gets that feeling started. By the time we get to ‘Feliz Navidad’, my KitchenAid mixer is out and ready to start the first (of many) batches of perfect, melt-in-your-mouth Shortbread cookies. The sound of the music is quickly muffled by the sound of the mixer busily creaming the butter and in no time, the scent of Christmas fills my house as the first sheet of cookies hits the oven.

Melt-In-Your-Mouth Shortbread Cookie Recipe

Ingredients:

  • 1 cup of room temperature unsalted butter
  • ½ cup of confectioners’ sugar
  • ¼ cup of cornstarch
  • 1 ½ cups of all purpose white flour

Preparation:

There are 2 secrets to making the perfect Melt-In-Your-Mouth Shortbread. The first secret is that great shortbread is all about the butter. It is imperative that you use a premium brand of butter. There are lots of butter options out there, and I am the first to buy whatever is on sale, but I never skimp or try to save when it comes to my baking!


The 2nd secret to perfect Melt-In-Your-Mouth Shortbread cookies is PATIENCE!! Place 1 cup of room temperature unsalted butter in your mixer. Turn your mixer on high for 10-15 minutes. Your butter will be perfectly creamed and will be white rather than yellow. That’s how you know the timing is right. (While the butter is mixing, preheat your oven to 375 degrees).

Once the butter is creamed, add in ½ cup of confectioners’ sugar and ¼ cup of cornstarch. Allow that all to mix together for a minute or two before adding in 1 ½ cups of all purpose white flour. Mix on low for one minute and then on high for 3-4 minutes. Spoon your cookie dough onto a cookie sheet about an inch apart. If you want people to think you are really fancy, use a piping bag with the biggest star tip to pipe them into swirls or use a small ice cream scoop to get perfect balls of dough.

Now….get ready for the glorious Christmas smell that fills your house! 10 minutes in the oven for these guys is PERFECTION! Keep an eye on them because the edges can burn quickly if you aren’t paying attention. Once they come out of the oven, allow them to cool completely before transferring them onto a plate – this will help to ensure they don’t crumble

A few sweet morsels of information I’d love to share with you:

  • The Alice cookie shape was made by hand cutting the dough with a paring knife. Easy enough to do if you’re only doing a few cookies, but a heads-up in case you don’t already know, time-consuming if you’re doing a lot of them. There’s got to be a cutter out there you could use though (drop me a line please if you see one), or even just pipe her on a rectangular cookie.
  • I used a Kopykake projector to help me pipe Alice’s shape. I used.
  • Wouldn’t these adorable Alice in Wonderland printables from The TomKat Studio be perfect for a Wonderland party?! I’m thinking that when I make Alice cookies again (with more of the characters and images), I’ll need to attach these sweet tags from TomKat’s shop to the cookie bags.

Best Shortbread Cookie Recipe Ever!

I’ve got a yummy recipe for y’all today….. “Best Shortbread Cookie Recipe Ever”.
Yep, that’s what I’m calling them because that’s what they are! )
And yes, I know I’m supposed to be sharing healthy recipes with you with all those pesky resolutions and all BUT I had to share these with you.

You will thank me, I think. )

Don’t they look like the best shortbread cookies ever?
I think so…and I know so because I’ve tasted them. )

Let me tell you the story of how they came to be.
My sweet daughter loves to bake and play around with different recipes.
She came up with the best shortbread cookie recipe ever and I told her she HAD to make me some.
She did and brought them to me at Thanksgiving.
I fell in LOVE. She is such an awesome baker!
She even made hers in leaf and pumpkin shapes. How cute!
And she added edible shimmer and yummy icing. They were not only beautiful, but amazing.
I wish I had taken a photo to share here but they disappeared much too quickly.

So this recipe is attributed it to her. :)

(and that raw dough is so yummy …and egg free, so no worries!)

If you are not a shortbread fan in general, you may not like these.
They are not your typical sweet, sweet “cookie”.


But if you love and appreciate a good “not too sweet” shortbread style cookie, you will love it!

They work well rolled and cut into squares or cut with cookie cutters.

I like to cut mine quite thick.

And they are good with icing….and without.

And a few sprinkles and goodies. :)

I rolled these out and made simple “square” shortbread but as I showed you above, this dough works wonderfully rolled and cut with cookie cutters.

But they sure are a nice treat with a spot of tea! ) Or coffee.. oh heck, or with anything or nothing at all!

    1. Preheat oven to 325°F. Butter 13x9x2-inch metal baking pan. Combine all purpose flour, sugar, and semolina flour in processor blend 5 seconds. Add butter, lemon peel, and vanilla. Using on/off turns, blend until coarse meal forms. Turn dough out into bowl. Add nuts and knead gently to combine. Press dough evenly over bottom of prepared pan. Using fork, pierce dough all over.
    2. Bake shortbread until pale brown in center and golden at edges, about 35 minutes. Cool in pan on rack 10 minutes. Cut lengthwise into 4 strips, then cut each strip crosswise into 6 squares. Cool completely in pan. (Can be made 1 day ahead. Cover tightly with foil store at room temperature.)
    1. *Semolina flour, often labeled "pasta flour," is available at specialty foods stores, Italian markets, and some supermarkets.

    I followed others' advice I used a tablespoon of grated lemon peel and used about 1.5 TBS of heavy cream to help the dough stick together before patting it into the pan. I also used the amount of vanilla called for, but double strength. The results were delicious, with the recipe being a definite keeper. One note: I added the cream just a little bit at a time, and when I put it in the pan, it was still very crumbly. However, when the crumbs are tamped down into the pan, the crumbs do come together into an adhering dough.

    If I could give it 3 1/2 stars I would, but the recipe deserves more than 3 stars. I nearly tripled the amount of lemon zest and even then the lemon flavor was not overpowering. I also subbed pecans for pistachios since I think they pair better with lemon. It's a very easy recipe and my colleagues at work loved the shortbread.

    I was a bit worried about trying this recipe due to some of the negative reviews, but it sounded so good I made it anyway. It was outstanding! The only thing I did differently was that I dipped one corner of each shortbread in bittersweet chocolate after they were cooled and cut so they looked a bit fancier. I have already been asked to make them again!

    Wow, I'm really surprised at most of the reviews. I didn't modify the recipe and it turned out great. It was slightly crumbly, which was a nice texture. This recipe is perfect with a good loose-leaf green tea. This recipe shouldn't be compared to shortbread cookies. Use high quality butter, brew a good tea and enjoy.

    Came out tasting pretty good, but was excessively crumbly, plus any pistachios that poked up even a tiny bit above the shortbread got a little burnt. Lemon and vanilla flavours were very subtle, it tasted like plain shortbread with pistachios.

    Really enjoyed these cookies. I made them a bit different and didn't use lemon zest and substituted the vanilla for almond extract. Yummy.

    the pistachios are too bitter. another nut would be better, plus they are too sodt after being cooked. the rest of the receipe is awesome!

    Simple to prepare, but really delicious. The lemon flavor & butter are a pleasing combo.

    I added extra lemon at the suggestion of others, and I drizzled in a bit of milk before kneading to get it to hold together better. With those relatively minor (or at least easy) changes, the end product was delicious. I also made half a batch without the pistachios, and the lemon flavor seemed to come through even more -- mmm, maybe I'll triple the lemon next time. :)

    I've made this recipe twice and have similar thoughts to those of the other reviewers. The first attempt was by the book, which came out dry and somewhat bland. My guests did enjoy the flavor of the pistachios. Several comments on the second attempt: 1.) Adding considerably more lemon zest and fresh lemon juice markedly improved the flavor. The juice helped reduce the dryness 2.) Roasting the pistachios beforehand with a few pinches of sugar was well-received 3.) Cutting down on the butter not only made the shortbread marginally healthier, but also helped the "crumbly" factor. Enjoy

    It sure sounded good but this recipe was just so-so. There are better shortbread recipes out there.

    I agree with Twify. It turned out really dry, more like a crumble that hardly held together. The taste is good but it's so messy to eat. I don't think I did anything wrong (even the oven temp is calibrated) so I will be looking for a different shortbread recipe.

    I added double the amount of lemon peel to give it a more intense lemon flavor--served it to guests who loved it, as did I.

    I had no other use for Pasta Flour. I used Rice Flour instead. The cookies were great!

    Really liked this recipe. It was quick and easy. The semolina added a nice crunch.

    Big disappointment. This shortbread was very dry and the pistachio flavor did not come through. I checked other shortbread recipes and the butter/flour ration of 1:2 seems pretty standard so don't know why the result was so dry. I'm sure I could tweak the ingredients and cooking time and improve the result, but why take the time when there are many other shortbread recipes that bring excellent results.

    I didn't have pistachiosso used walnuts. Found it a bit dry so added a few Tbsp. of cream. They were eaten before I had time to make the llemon pudding I had intended to make.[I live with 5 teenagers and husband]

    Yummy! I served them with a slice of grilled pineapple, vanilla ice cream, and a drizzle of ginger syrup. A simple but elegant dessert that everyone loved. Of course they're scrumptious all by themselves too.


    Ingredients

    • 1 Cup Butter
    • 2 ½ Cups All-Purpose Flour
    • 1/3 Cup Honey
    • ¾ Cup Chopped Pecans
    • 1 tsp. Vanilla

    Ingredients

    How to make it

    • Honey Shortbread
    • 1 Cup Butter 2 ½ Cups All-Purpose Flour
    • 1/3 Cup Honey ¾ Cup Chopped Pecans
    • 1 tsp. Vanilla
    • Beat butter, honey and vanilla in large bowl with electric mixer until mixture is light and fluffy.
    • Add flour, 1 cup at a time, beating well after each addition. If dough becomes too stiff to stir, knead in remaining flour by hand.
    • Work in nuts.
    • Pat dough into shortbread mold or ungreased 9-inch cast iron skillet.
    • Score surface with knife so it can be divided into 24 wedges, prick deeply with fork into score marks.
    • Bake in preheated 300F oven 35 to 40 minutes.
    • Cool in pan on wire rack 10 minutes.
    • Remove from pan.
    • Cut into wedges while warm.
