Easy ways to eat right on a budget

With New Year’s resolutions upon us and the post-holiday pinch ambushing our wallets, it’s time to revamp those indulgent holiday eating plans and rethink the way we’ve been doing dinner. After reading Michael Pollan’s Food Rules book this weekend, I decided to sit down and make a list of the healthiest and most affordable foods found in the grocery store and farmers market stands. I also pulled together recipes from The Family Kitchen which feature these foods, because I believe one of the best ways to get healthy and stay in a budget is to have a recipe and a plan. Here are healthy foods which can be purchased for a dollar, and incredible recipes to go with each of them.

A pack of tofu costs about a buck and is packed with healthy soy protein.

According to a new study, healthful food is $1.50 more expensive per day, or about $550 per year.

But that certainly doesn't mean you can give up on fruits and veggies, nor does it mean that lean meats and whole grains have to break the bank. Here are eight of our favorite superfoods -- all of which cost less than a buck per serving. Now that's delicious!
