Almost any variety of green-fleshed melon, such as Galia or Honeydew, can be used for this very pretty soup, but it is essential that the melon be perfectly ripe and sweet. Serve the soup as a refreshing first course when the weather is hot, dressing up each bowlful with a swirl of berry purée and some whole berries.

  • 1 large ripe green-fleshed melon, about 1.25 kg (2¾ lb)
  • juice of 1 lime
  • 3.5 cm (1½ in) piece fresh root ginger, peeled and grated
  • 150 g (5½ oz) blueberries
  • 120 ml (4 fl oz) freshly squeezed orange juice
  • 2 tbsp Greek-style yogurt
  • 150 g (5½ oz) raspberries or strawberries

  1. Halve the melon, discard the seeds and scoop the flesh out of the peel into a blender or food processor. Add the lime juice and ginger. Purée until smooth, stopping occasionally to push the pieces of melon to the bottom of the goblet or bowl. Pour the purée into a bowl, cover and chill for 30 minutes or until cold.
  2. Put the blueberries into the blender or food processor. Add the orange juice and yogurt and purée until smooth. Transfer to a second bowl, cover and chill for about 30 minutes or until cold.
  3. Divide the melon soup among 4 chilled shallow glass bowls or dishes. Spoon a quarter of the blueberry purée onto the centre of each in a decorative pattern. Scatter the raspberries or strawberries on top. Serve at once.

Some more ideas

Try orange-fleshed melon, such as Ogen, Charentais or Cantaloupe, and top the soup with sliced kiwi fruit instead of the red berries. * Use 2 kg (4½ lb) watermelon instead of the green melon. Chop the flesh, discarding the seeds, then purée with the lime juice and 1 seeded and chopped fresh green chilli instead of the ginger. Coarsely crush the blueberries with the raspberries and/or strawberries, adding 1–2 tbsp orange juice. Omit the yogurt.

Their high water content makes them a delicious and refreshing thirst-quencher. * Ginger is thought to be an anti-inflammatory agent that can help to ease some of the symptoms of arthritis. * Blueberries are rich in vitamin C and a useful source of soluble fibre. They also contain several phytochemicals: flavonoids which strengthen blood capillaries and improve circulation, athocyanosides which help to fight infection and inflammation, and ellagic acid which can help to prevent cell damage that can lead to cancer. Like cranberries, blueberries also contain a natural antibiotic that can help to prevent urinary tract infections.

Minted melon, tomato & prosciutto salad

Quality produce makes this dish, Charentais melon, heirloom tomatoes and salty prosciutto marry beautifully. Ideal as a sharing platter starter for a summer dinner party

  • 6 cups cubed ripe melon
  • ½ cup diced seedless cucumber
  • 6 tablespoons lime juice, divided, plus more to taste
  • 1 tablespoon thinly sliced scallion green, plus 1 whole scallion, divided
  • 1 jalape&#241o pepper, plus more to taste
  • 1 cup cold water
  • 1 2-by-1/2-inch strip orange zest
  • ½ cup orange juice, plus more to taste
  • 1 teaspoon chopped fresh ginger
  • ½ teaspoon kosher salt
  • 2 tablespoons finely chopped cilantro, or mint for garnish
  • 6 teaspoons plain yogurt, or crème fraiche for garnish

Dice enough melon to measure 1 cup and combine in a small bowl with cucumber, 2 tablespoons lime juice and scallion green. Cover and refrigerate until ready to serve the soup.

Place the remaining melon and 4 tablespoons lime juice in a blender. Chop the whole scallion and seed and chop jalapeno add to the blender along with water, orange zest, orange juice, ginger and salt. Blend until smooth and creamy. Taste and add more lime juice, jalapeno and/or orange juice, if desired.

Refrigerate the soup until chilled, 2 hours.

Stir the reserved diced melon mixture and divide among 4 soup bowls. Pour the soup into the bowls. Garnish each serving with cilantro (or mint) and yogurt (or creme fraiche), if using.

Make Ahead Tip: Refrigerate the melon mixture (Step 1) and soup (Step 2) in separate containers for up to 1 day. Finish with Step 4 just before serving.

Hawthorn Berry Honey Tea

This tea tastes great. In fact, it tastes a bit like iced tea but with a hint of sweet hawthorn fragrance when served cool. This tea is so refreshing and aperitive. I love a cup of this tea after a heavy meal has been had. This is because hawthorn is known to aid in digestion and support the functions of the stomach and spleen. The Medical Center at the University of Maryland also sited that hawthorn could benefit those with hypertension and heart disease.

This particular recipe is also very easy to make and takes about 15 minutes to make. It only requires a handful of dried hawthorn berry slices (which you can buy conveniently online in small quantities), honey (I prefer raw unprocessed types), and some ice cubes. This tea can be prepared in advance and stored in a glass pitcher inside the refrigerator. It is a great alternative to a plain regular iced tea.

While many people may associate soups with the winter months, chilled soup is a delicious option for warmer weather. Often overlooked, bowls of flavorful chilled soup are sure to surprise. From garlicky vegetable iterations to spicy Southwestern-inspired bowls, we're sharing some of our favorite recipes for chilled soups here.

The first thing that comes to mind when thinking of a cool soup is classic tomatoey Gazpacho, pictured here. We have a number of variations of the tomato-paste-based soup. A sweet-and-savory option comes in the form of Watermelon Gazpacho. The fruit's a summer staple in and of itself, but it reaches new heights when combined with tangy tomatoes. Or try our Golden Gazpacho, which uses squash, heirloom tomatoes, and garlic for a flavorful take on the classic dish.

Looking for something with tons of vitamins and nutrients? Make our healthy Chilled Garlic and Spinach Soup, which features low-sodium chicken broth, low-fat plain yogurt, and loads of greens for a vitamin-rich option. You could also whip up a batch of our airy and Light Gazpacho Broth. Home-made ice tea with ginger, mint and lemon

In summer I love to drink buckets of ice tea to break the monotony of all the water. I also attempt to avoid sugar in beverages, so by making my own ice tea, I control this. It also makes it so affordable and so very, very tasty.

This combination of flavours is one which friend of mine Laurence introduced me to, and it works out perfectly.

All you do is brew a strong jug of tea and then keep this in the fridge after its cooled. You then pour it over a glass filled with ice to dilute it and cool it down even further.

Oh and for the benefit of those in countries outside of South Africa who may not be aware of our wonderful Rooibos / Redbush tea, its a tea that has its origin in South Africa, and in the Western Cape to be precise (that’s where I live). Its packed with antioxidants and is 100% caffeine free, so its a herbal tea that can be consumed in a similar way to black tea.

I love to make iced tea using Rooibos / Redbush tea rather than black tea which I find quite bitter, but you can use whatever tea you prefer. I sometimes blend in about 25% green tea with the Rooibos, which then just ratchets up the health properties a notch, and I have totally acquired the taste for it.

To make a liter of strong iced tea.

  • 4 Rooibos tea bags / liter of water
  • about 5 cm piece of ginger, peeled and finely sliced
  • peel from 1 lemon
  • small handful of mint leaves
  • 2 T of honey (or sweetener of your choice, I also like to use artificial sweetener)
  • juice of one lemon
  • extra slices of lemon and mint to serve (optional)

Fill a heat proof jug with boiling water and add the tea bags. While it is hot, add all the ingredients except the lemon juice and hte honey, and allow it to infuse. I normally leave it in until the water is luke warm and then I remove the tea bags. Stir through the honey and add the lemon juice. Store in the fridge until you are ready to use it.

If you leave the mint, lemon rind and ginger in the tea, the flavour will strengthen. If you want to keep it quite mild, strain it out when you remove the tea bags. Either way works well. You can also muddle the aromatics slightly in the tea, bruising the ginger, mint and lemon, to further release their delicious oils.

Nothing quite beats a refreshing glass of icy cold iced tea in summer.

2 cloves garlic, chopped
5 medium tomatoes
5 Roma tomatoes, ripe
2 medium cucumbers, English, peeled, cut in 1-in pieces
1 large Spanish or red onion
1 large green bell pepper, cored, seeded and deribbed
1 large red bell pepper, cored, seeded and deribbed
2 cups tomato juice, or vegetable juice cocktail
1/4 cup olive oil, extra virgin
1/4 cup red wine vinegar
1/2 cup vodka or vermouth (optional)
2 tablespoons fresh lime juice
1 tablespoon Worcestershire sauce
2 dashes Tabasco sauce, or to taste
1/4 teaspoon cayenne pepper, or to taste
1 tablespoon celery salt, or to taste
freshly ground black pepper
2 inner ribs celery, very finely diced
garlic croutons (optional)

Core the 5 medium tomatoes and coarsely chop them. Whiz the garlic in a blender or food processor, add the tomatoes and puree until smooth. Strain the puree into a large non-reactive bowl.

Coarsely chop 1 of the cucumbers, 1/2 of the onion, and 1/2 of the green and red bell peppers. Add the chopped vegetables to the processor (if using a blender, add 1/2 cup of the tomato or vegetable juice as well). Process until liquified strain into the large bowl, pressing down with the back of a spoon to extract all liquid.

Add to the bowl the remaining juice, olive oil, red wine vinegar, vodka or vermouth if using, lime juice, Worcestershire, Tabasco, cayenne pepper, celery salt and pepper. Stir well. Cover and refrigerate for 4 hours or overnight.

Finely dice the Roma tomatoes, remaining onion, peppers and cucumber. Add the finely diced celery. Reserve, refrigerated in small mixing bowl.

To serve, ladle soup into chilled individual bowls. Sprinkle with the chopped vegetables and croutons, if using.
